  • Saddleback Christmas Feasts 2022

    Slow smoked Beef Shank (affectionately named Thor’s Hammer). Seasoned with heavy salt and pepper and a touch of “Moo Locks” Beef Rub. We then smoke it until it's fall off the bone tender. The Beef Shank is accompanied by Lobster Mac and Cheese with Herb Gratin, Garlic Mashed Potatoes, Ceasar Salad, Gravy, and Dinner Rolls.


    The meal is designed to feed 4-6 people. It will be served cold with reheating instructions. This special is only available December 22nd - 24th at our Okemos, REO Town, and West Lansing Locations.

  • Holiday Meal Donations 2022.

    We will be giving out Holiday Meals to folks in need. You can donate a meal for someone in need for $25. For every meal donated, Saddleback will donate an additional meal! 

    The meals include enough food to feed two people, or one person with leftovers. Saddleback will be doubling all donations. So one donation can feed 4 people this Holiday season! If you’re interested in donating, just use this link.

    The Meals include: 

    • 1lb of Protein 
    • 1lb of Mashed Potatoes 
    • 1lb of Stuffing

    This Thanksgiving we were able to feed over 680 people thanks to all of your support! The meals were distributed from our Okemos location and with help from local churches.

  • Thanksgiving Reheating Instructions

    We hope you enjoy your meal! Below are our recommended steps for reheating your food. 

    Each meal kit comes with:

    • 1lb of turkey
    • 1lb of Mashed Potatoes
    • 1lb of Stuffing

    Our recommended reheating instructions are as follows:

    Turkey:
    1 pound Turkey comes wrapped in plastic wrapping.  Remove from plastic wrap and microwave on high for 1.5 minutes or until turkey reaches desired temperature.
    Mashed Potatoes:
    Leave Mashed Potatoes in the 16 oz microwaveable safe container.  Remove lid and microwave on high for 2-3 minutes, stir after 1.5 minutes and continue.  Butter can be added for additional creaminess 
    Stuffing:
    Leave Stuffing in the 16 oz microwaveable container.  Remove lid and microwave on high fro 1.5 minutes or until stuffing reaches desired temperature.  If desired temperature is reached and the stuffing seems dry, add 2 oz of water to stuffing and stir

    If you do not have access to an oven or all of the appropriate equipment, the microwave will work fine. We recommend using your own dishes in the microwave. Heat each item 30 seconds to a minute at a time or until you reach your desired temperature.

  • 2022 Thanksgiving Meal Reheating Instructions

    Thank you for purchasing a Thanksgiving Meal from Saddleback BBQ! Here are our comprehensive reheating instructions. 

    We recommend setting aside 4-5 hours for this process. This will allow you to complete all of the necessary steps without worrying about having the food ready on time. So if you'd like to eat at 3pm, start this process at 10am. 

    Whole Turkey

    1. Put whole turkey in deep aluminum pan
    2. Add about and inch of water
    3. (Optional) Put a small amount of chicken stock in the water
    4. Put in oven at 300F
    5. Check after one hour, you’re looking for internal temperature of 165F
    6. If not done, place back in oven checking every 30 minutes
    7. This process can take up to three and a half hours for the turkey to reach 165F
    8. If the turkey gets done before you would like to eat, don't stress, just set your oven to it's lowest possible setting and keep it in the oven. 

     

    Half Turkey

    1. Put half turkey in deep aluminum pan
    2. Add about and inch of water
    3. (Optional) Put a small amount of chicken stock in the water
    4. Put in oven at 300F
    5. Check after 50 minutes, you’re looking for internal temperature of 165F
    6. If not done, place back in oven checking every 20 minutes
    7. This process can take up to two hours for the turkey to reach 165F

     

    Mashed Potatoes - Place in a saucepan, bring stove to medium heat. Add butter and milk and stir until you reach your desired consistency. Continue to stir occasionally until you reach your ideal temperature (5-10 minutes).  

     

    Mac & Cheese - Place in a saucepan, bring stove to medium heat. Add butter and milk and stir until you reach your desired consistency. Continue to stir occasionally until you reach your ideal temperature (5-10 minutes).  

     

    Gravy - Place in a saucepan over medium heat. Stir occasionally and pull off heat once you reach you desired temperature (3-6 minutes) 

     

    Sweet Potatoes - Place in a saucepan over medium heat. Add milk and butter until you reach your desired consistency. Continue to stir occasionally until you reach your ideal temperature (5-10 minutes).

    One of Saddleback's long standing traditions is offering Thanksgiving Meals to the public. This year we're offering 4 different options. All meals will come fully cooked and served cold with simple reheating instructions. The meals are available for pickup from 11/21 - 11/23. 

    All of our turkeys are smoked using Michigan Hardwoods. All turkeys are sourced locally, free-range, antibiotic & hormone-free.

    Includes a whole smoked around 15-18lb fresh Otto’s Turkey, large containers of Mac and Cheese, Mashed Potatoes, Stuffing, Sweet Potatoes. A plentiful amount of Gravy and an assortment of Dinner Rolls. Feeds 7-10 people.

  • Saddleback Staples - Baby Back Ribs

    Here at Saddleback, we prefer baby back ribs with a little bite to them.  We think baby backs provide a better flavor with more meat and less fat, and this taste is only enhanced by our pork rub, which brings out both Texas and Carolina flavors. We start by smoking the ribs bone-down for 4-6 hours before flipping for another 2 hours.  At this point, the bone barely pops away, giving the rib a consistency that won’t fall apart on the customer and will be easy to eat. We serve them standalone in half or full racks, but have also used them on our special Saddleback rib-sandwich.  Hoping to make its return in the near future, our rib sandwich comes in full (6 bones) and half (3-4 bones) sizes, is smothered with our sweet and savory sauce and topped with our housemade pickles on a hoagie bun.

  • Saddleback Staples - Sweet Potatoes

    While most places will give you a sweet potato as fries or twice baked, Saddleback gives its customers a mashed sweet potato. We start by cooking down raw sweets before baking and pulling them, then mixing in brown sugar and margarine.  While this is happening, we reduce vernors down to a caramelized syrup, add in brown sugar, cloves, and ginger before mixing it together with the sweet potatoes. An already wonderfully tasting flavor is supplemented with crispy sweet straws, which we make by slicing up a whole sweet potato into spaghetti-like pieces, fried to a bright orange and seasoned with sugar, cinnamon, and keyane. Consistent with a sweet potato pie, this is a wonderful fall and winter dish that adds unique flavors to a classic side dish.

  • Saddleback Staples - Pulled Chicken

    Saddleback does its pulled chicken a lot differently than most barbeque restaurants. Most places you go to will smoke a whole chicken, or separate it out into thighs or breasts, and smoke it with the bone-out and add no seasonings.  Here at Saddleback, we give our customers chicken straight from the source.  We start with all-dark-meat leg and thigh quarters, and put them on the smoker for 4 hours with the bone in and skin on.  We believe this process helps hold in the moisture and juices that give the pulled chicken a truly fresh flavor with great coloring. 


  • Saddleback Staples - Poutine

    Poutine has strong roots in Canada, and we tried to put a barbeque spin on it here at Saddleback. We had the idea for poutine because we were wasting all of our pork and chicken bones, and wanted to put them into something that customers would love.  When making poutine, the gravy is the piece that ties the rest of the dish together.  We start with a roux of flour and margarine, then add in some chicken and pork stock.  Next, we will take our chicken and pork bones and boil them together with carrots, celery, onions and garlic to make a smoky tasting gravy.  This gravy goes on top of our seasoned fries, cheese curds, and smoked meat, and the dish is finished with green onions and a little of our pork rub.
