  • Christmas Meal Reheat Instructions

    Thank you so much for purchasing a Christmas Meal! It’s time to get your meals prepared, below are directions for the Prime Rib platters and Brisket platters!

    Prime Rib Meal

    Prime Rib – Place in a large pan with about a half inch of water (or beef stock). Wrap the entire dish in aluminum foil. Preheat the oven to 350 degrees. Place in the oven until you reach your desired internal temperature. We recommend about 130-135 degrees for medium rare!

    Mac & Cheese – Place in a saucepan, bring stove to medium heat. Add butter and milk and stir until you reach your desired consistency. Continue to stir occasionally until you reach your ideal temperature (5-10 minutes).

    Mashed Potatoes – Place in a saucepan over medium heat. Add milk and butter until you reach your desired consistency. Continue to stir occasionally until you reach your ideal temperature (5-10 minutes).

    Gravy – Place in a saucepan over medium heat. Stir occasionally and pull off heat once you reach you desired temperature (3-6 minutes)

    Sweet Potatoes – Place in a saucepan over medium heat. If you desire creamier consistency you can add a small amount of butter and stir. Continue to stir occasionally until you reach your ideal temperature (5-10 minutes).

    Corncake – The corncake is completely fine to eat at room temperature, but if you to prefer to have it warmed up you can put it in the oven at 300 degrees for 5-10 minutes.

    Brisket Meal

    Brisket – Place the brisket, still in the plastic wrap, into a large deep dish. Add water until it covers the pan and goes up about a half inch. It’s okay if the water touches the wrapped brisket. Wrap the entire dish in aluminum foil. Heat your oven to 350 degrees. Place the dish in the oven, you are looking for an internal temperature of 165 degrees, this typically takes between 35 minutes to an hour. What’s most important is the internal temperature, not necessarily how long it takes.

    Mac & Cheese – Place in a saucepan, bring stove to medium heat. Add butter and milk and stir until you reach your desired consistency. Continue to stir occasionally until you reach your ideal temperature (5-10 minutes).

    Mashed Potatoes – Place in a saucepan over medium heat. Add milk and butter until you reach your desired consistency. Continue to stir occasionally until you reach your ideal temperature (5-10 minutes).

    HAM – Place ham in skillet on medium heat, place a small bit of butter in pan and cook until you reach your desired temperature.

    MASHED POTATOES – Place contents in a sauce pan, put on stove top. Mix in butter and milk as needed to reach a creamy consistency.

    STUFFING – Place contents in an oven safe dish add 1/4 quarter cup of chicken stock (or water) and mix well. Preheat your oven to 325 degrees. Cook for 10-15 minutes.

    If you do not have access to an oven or all of the appropriate equipment, the microwave will work fine. We recommend using your own dishes in the microwave. Heat each item 30 seconds to a minute at a time or until you reach your desired temperature.

  • 4th of July Feast

    For the 4th of July this year, we made a feast for the ages. Utilizing our pellet smoker for every aspect of the cook.

    Our centerpiece was a Tomahawk Rib Roast smoked to perfection. The 10lb roast was seasoned with fresh rosemary, thyme, garlic, salt, and pepper. We smoked this with Smoke Ring’s Oak pellets for about 3 hours at 250 degrees, until it reached an internal temperature of 120 degrees. We then seared it on a piping hot grill to help give it a nice bark. This gave us the medium-rare cook we were looking for.

    Seafood skewers consisted of half a lobster tail, scallops, shrimp, sweet corn, and lemon. We seasoned these with “Slap your mama” seasoning and brushed a compound butter on them throughout the cook. The compound butter was a blend of butter, green onions, Italian parsley salt, and pepper. We were looking for an internal temperature of 145 degrees, once we met our temperature we seared them on the hot grill.

    Scalloped potatoes were cooked in the same smoker as the rib roast. These were russet potatoes, covered with a sauce consisting of cream of mushroom soup, heavy cream, asiago cheese, Cholula Hot Sauce, salt, pepper, and garlic.

    The ladies made the strawberry rhubarb pie. They made a 3-2-1 dough (3 parts flour, 2 parts fat, 1 part water) the night before and put the pies together that day. They baked for 1 hour at 350 degrees on the Z Grill and turned out perfect

  • How to Reheat Turkey?

    How to Reheat a Thanksgiving Turkey

    Every Thanksgiving Saddleback offers a fresh smoked turkey. This inevitably leads to questions about how to reheat the bird for later use. We’re giving out our best tips, please use them and let us know what you think!

    Reheating a Whole Turkey

    1. Put whole turkey in deep aluminum pan
    2. Add about and inch of water
    3. (Optional) Put a small amount of chicken stock in the water
    4. Put in oven at 300F
    5. Check after 45 minutes, you’re looking for internal temperature of 165F
    6. If not done, place back in oven checking every 15 minutes

    Reheating a Small Portion (1/3lb – 1lb)

    1. Put sliced turkey in small sautee pan on stove top
    2. Put stove on medium heat
    3. Add a small portion of butter
    4. Cook for 3-4 minutes, or desired temp
    5. Enjoy!
