Ingredients (6-8 Servings)
- 1lb gulf shrimp deveined (roughly 24 shrimp)
- 1lb thin sliced bacon
- 6oz Saddleback BBQ Sweet and Savory Barbecue Sauce
- 2 stalks scallions diced
- 1 lemon
- Non-stick pan spray Toothpicks
- 1/2 cup brown sugar
- 1/4 cup salt
- 1/8 cup chili powder
- 1 tablespoon cumin
- 1 teaspoon black pepper
- .5 tablespoon granulated garlic
- .5 tablespoon onion powder
Instructions
- Mix all dry spices together in a small bowl. Set aside.
- Spray baking sheet with non-stick cooking spray.
- Slice bacon in half longways. Wrap cut bacon around each shrimp. Secure bacon to shrimp with a toothpick through the shrimp. Place shrimp seam-side down on the baking sheet.
- Leave space between each bacon wrapped shrimp, making sure they are not touching one another
- Once all shrimp are wrapped apply Saddleback BBQ Sweet and Savory Barbecue Sauce by lightly brushing both sides until completely covered.
- Sprinkle the shrimp with most of the dry spices. Set aside a small amount of the spice mixture for garnish.
- Bake at 375 degrees for 12 minutes.
- Finish in the broiler for 5 minutes to crisp out the bacon.
- Re-apply Saddleback BBQ Sweet and Savory Sauce to the shrimp and sprinkle with the remaining spice mixture.
- Garnish with scallions and lemon zest.
