Ingredients (6-8 Servings)

  • 1lb gulf shrimp deveined (roughly 24 shrimp)
  • 1lb thin sliced bacon
  • 6oz Saddleback BBQ Sweet and Savory Barbecue Sauce
  • 2 stalks scallions diced
  • 1 lemon
  • Non-stick pan spray Toothpicks
  • 1/2 cup brown sugar
  • 1/4 cup salt
  • 1/8 cup chili powder
  • 1 tablespoon cumin
  • 1 teaspoon black pepper
  • .5 tablespoon granulated garlic
  • .5 tablespoon onion powder


  1. Mix all dry spices together in a small bowl. Set aside.
  2. Spray baking sheet with non-stick cooking spray.
  3. Slice bacon in half longways. Wrap cut bacon around each shrimp. Secure bacon to shrimp with a toothpick through the shrimp. Place shrimp seam-side down on the baking sheet.
  4. Leave space between each bacon wrapped shrimp, making sure they are not touching one another
  5. Once all shrimp are wrapped apply Saddleback BBQ Sweet and Savory Barbecue Sauce by lightly brushing both sides until completely covered.
  6. Sprinkle the shrimp with most of the dry spices. Set aside a small amount of the spice mixture for garnish.
  7. Bake at 375 degrees for 12 minutes.
  8. Finish in the broiler for 5 minutes to crisp out the bacon.
  9. Re-apply Saddleback BBQ Sweet and Savory Sauce to the shrimp and sprinkle with the remaining spice mixture.
  10. Garnish with scallions and lemon zest.
